Cafe Rio!

One thing I have really missed about not being in Utah is Cafe Rio. I love their pork salads! Last Saturday, Scott and I were trying to think of something we could do for our Sunday dinner and Scott had the fantastic idea of making these salads! We weren't sure how on earth we were going to make it taste like Cafe Rio does, so we headed to Google! I googled the recipe and I found a blog with step by step instructions for everything you need to duplicate the recipe. Trust us, it's the real deal! The only suggestions we make are to make the dressing the day before so that it has time to set up in the fridge, otherwise it will be too runny. Also, the beans were a little runny too. We're thinking maybe a little less tomato juice next time. Anyway, I just wanted to put this up because we loved it! It was also a lot of fun to make together!
